The OG Mimi, or the MDC’s grandmother, gave us this recipe for the best and sweetest and best sweet potato casserole we have ever had! This is a Mimi and Mademoiselle Thanksgiving staple.

Casserole
- 3 Cups Sweet Potato Pulp Canned (2 Regular) or Fresh (4-6 Baked)
- 3/4 Cup Sugar
- 4 Tablespoons Butter
- 1/2 Cup Whole Milk
- 2 Eggs Beaten
- 1/2 Teaspoon Salt
- 1 1/2 Teaspoons Vanilla
Topping
- 1 Cup Dark Brown Sugar
- 1/3 Cup All Purpose Flour
- 1 Cup Chopped Pecans
- 1/3 Cup Melted butter

Instructions
- For casserole combine all ingredients and mix together until smooth and well blended. Using a mixer is fine on low speed.
- Pour casserole ingredients into a 9 x 9 pan.
- Mix all topping ingredients together. Spread evenly across casserole mixture.
- Bake uncovered at 350 degrees for 35 minutes. Cool for 5-10 minutes and serve.
Recipe Notes
Our group likes this casserole sweet so we generally use a larger pan 9 x 14 and double the amount of topping for an extra scrumptious casserole.
