
Lemon Poppy Seed Muffins with Lemon Glaze

Ingredients
- 1 3/4 cups all purpose flour
- 3/4 cup superfine sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 3/4 cup buttermilk
- 1/4 cup fresh lemon juice (about 1 lemon)
- 1/2 cup (1 stick) unsalted butter
- 1 tablespoon poppy seeds
- 1 teaspoon lemon zest
For Glaze
- 1/2 cup powdered sugar
- 1 tablespoon fresh lemon juice
- 1 tablespoon half-n-half
- 1 teaspoon lemon zest
For the muffins
- Preheat oven to 350 degrees.
- Sift the flour, sugar, baking powder, baking soda and salt into a large mixing bowl.
- In a separate bowl, whisk together the egg, buttermilk and lemon juice.
- Make a well in the center of the flour mixture and pour the buttermilk mixture into the well.
- Add the melted butter and fold carefully so not to overwork the batter, then gently stir in the poppy seeds. The batter will seem slightly lumpy.
- Using a small ice cream scoop fill muffin cups 3/4 full. Bake until golden 20-22 minutes.
- Prepare glaze while muffins are baking. In small bowl mix 1/2 cup powdered sugar, with half-n-half, lemon juice and lemon zest. When muffins are done and warm, dip muffin tops in glaze and sprinkle with sugar if desired. Serve warm.
