Ingredients
  1. 1 3/4 cups all purpose flour
  2. 3/4 cup superfine sugar
  3. 2 teaspoons baking powder
  4. 1/4 teaspoon baking soda
  5. 1/4 teaspoon salt
  6. 1 large egg
  7. 3/4 cup buttermilk
  8. 1/4 cup fresh lemon juice (about 1 lemon)
  9. 1/2 cup (1 stick) unsalted butter
  10. 1 tablespoon poppy seeds
  11. 1 teaspoon lemon zest
For Glaze
  1. 1/2 cup powdered sugar
  2. 1 tablespoon fresh lemon juice
  3. 1 tablespoon half-n-half
  4. 1 teaspoon lemon zest
For the muffins
  1. Preheat oven to 350 degrees.
  2. Sift the flour, sugar, baking powder, baking soda and salt into a large mixing bowl.
  3. In a separate bowl, whisk together the egg, buttermilk and lemon juice.
  4. Make a well in the center of the flour mixture and pour the buttermilk mixture into the well.
  5. Add the melted butter and fold carefully so not to overwork the batter, then gently stir in the poppy seeds. The batter will seem slightly lumpy.
  6. Using a small ice cream scoop fill muffin cups 3/4 full. Bake until golden 20-22 minutes.
  7. Prepare glaze while muffins are baking. In small bowl mix 1/2 cup powdered sugar, with half-n-half, lemon juice and lemon zest. When muffins are done and warm, dip muffin tops in glaze and sprinkle with sugar if desired. Serve warm.
